Brunch for Your Valentine

Kath's Kitchen / Wednesday, February 13th, 2019

(This post is pretty fraudulent as I actually made my boyfriend this very brunch on MY birthday, BUT…)

What is better than avo on toast? Avo on toast with bacon. If you feel like treating your partner, your friend or your family on Valentine’s tomorrow, I’ve got the simplest recipe to patronisingly tell you “how to” today so sit back and have a read or, you know, cross of your browser, because you know what to do anyway.

Ingredients | For two lovebirds (or alternative humans)

  • 2 slices of Sourdough bread
  • 1 avocado
  • 4 rashers of streaky, unsmoked bacon
  • 12 on the vine tomatoes
  • Olive oil
  • Salt & pepper
  • (Soft cheese if you fancy it!)

  1. Pop your oven on to gas mark four and season your tomatoes with olive oil and some salt (sea salt if you’ve got it) and put them in the oven for a total of eight minutes
  2. Grill your bacon on a low to medium flame
  3. Slice your bread and avocado, squeezing out the avo and mushing it with a fork- add salt and pepper
  4. Once the bacon is a minute or so away from being done, pop your bread under the grill and turn after half a minute or until it’s turning golden
  5. Serve everything up, spreading the avo onto the toast and dumping your bacon on top. Add those looovely tomatoes
  6. (Top tip: I made this breakfast the day after this photo and I spread soft cheese onto the toast before the avo and, I’m just saying… game CHANGER)
  7. Enjoy!

No matter how you’re spending your Valentine’s Day (I’m going to work, going to the gym and reading my book) or if you don’t care about it at all, get yourself some avo on toast with bacon. Because that’s all the love you need.

Love, Kath
